Banana Bread

total time to make about 50 mins including baking

preheat oven to 180C/gas4

grease a 1lb loaf tin (about 22cmx12cm) line base with greaseproof if your not using a non-stick tin or for ease of removal

in a large bowl mash up 2 large browning bananas,

add in 1 egg,130g self raising flour,1tsp baking powder,55g softened butter,100g caster sugar and mix well...if bananas aren't overly ripe you may need to add in a little milk for a dropping consistency

pour mixture into tin and bake center oven for 35-40 mins or till a skewer in the middle comes out clean

allow to mostly cool in tin then turn onto wire rack to cool completely

Toffee Yoghurt Muffins


Firsty...the only reason I made toffee specifically was because I had a huge pot to use up. I'm writing down the original quantities but i doubled it up to use up the pot and made 48 buns..fairy cake sized not muffin sized as I only had small cases. Fill the cases quite well as it dosnt rise too much but is still amazingly light considering.

This is the kind of recipe I like...bung it together,bung it in oven,munch :D

preheat oven to gas 5, 190c, 375f
115g softened butter/marg
150g caster sugar
250g plain flour
1 egg
1/2 tsp baking powder
240ml yoghurt (any flavour you like, I used toffee)

Put everything together an mix well...this is where I love my kenwood mixer.

Fill the cases and bake for approx 20 mins till springy and golden.

Turn onto rack to cool.

Gingerbread

I've tried many recipes over the years, but this one is my personal favourite...a soft sticky,sweet cake that lasts for a few days without drying out...easy too


RECIPE
preheat oven to 160C, grease and line one 1lb or 2 1/2lb loaf tins


8oz soft brown sugar
2oz butter
1 tablespoon treacle (or syrup for a lighter sponge)
8 fluid oz milk

put the above ingredients in a pot and heat till sugar dissolved then leave to cool

in another bowl put...

8oz plain flour
2tsp ground ginger
1/2 tsp ground cinnamon
1tsp bicarbonate of soda

once sugar/milk mixture is cooled pour it into flour mix, mix thoroughly and pour into greased and lined tin/tins

bake for approx 1 hour or until when you stick a knife in the center it comes out clean

leave to cool slightly in the tins before tipping out and cooling completely on wire rack

Wonderful served as a thick slice with butter and a cup of tea...also great served with warm custard.
